Healthy Morning Glory Muffins with Freshly Milled Flour

These nourishing, fresh milled Morning Glory Muffins are one of my favourite muffins right now. Made with freshly milled soft white wheat flour, this is a muffin that is not only soft and delicious, but is full of healthy ingredients that will leave you feeling full and satisfied. It's a perfect snack to have on hand for those postpartum days and to have on the counter for your kids to enjoy throughout the day.

Why You'll Love These Morning Glory Muffins

Nutritious - These muffins are filled with healthy ingredients such as carrots, apples, apple sauce, flaxmeal, coconut oil, cinnamon, and freshly milled whole wheat.

Delicious - This healthy, whole grain muffin is super soft and with a touch of sweetness and a rich flavour that only comes from the freshly milled flour.

Simple - There aren't a lot of steps to these muffins and not a whole bunch of strange ingredients that you won't have in your kitchen. No need to use a mixer, no need to chill, just mill the flour and mix up, bake, and enjoy! Us Moms and postpartum moms do not have time for a whole bunch of confusing steps when it comes to baking.

Benefits of Using Freshly Milled Flour

In the past two years, I have been using 100% freshly-milled flour for all my baking. From sandwich loaves to biscuits to these healthy muffins. The benefits are simply unbelievable and the cost for a mill is totally worth every penny. I use the Mockmill and I haven't had any issues with it.

When it comes to baking muffins or cookies, I like to use the soft white wheat berries. It gives the muffins and cookies a soft texture that I like and adds such a rich flavour to it.

Are These Muffins Healthy?

Yes, these muffins are completely healthy! There are no ingredients that will harm your body or send it on a high blood sugar spike. The wheat in these muffins are freshly milled, which adds a host of health benefits, the oil in this recipe is coconut oil, no seed oils here! This recipe contains fruit and vegetables and a touch of honey to sweeten it up a bit. Don't be afraid to have this as a breakfast, just maybe eat it on the side of some bacon or an egg or two to bump up your protein intake.

Ingredients

Freshly milled soft white flour - You can sub regular whole wheat flour, but there may be differences in moisture, texture, and flavour.

Honey - You can use maple syrup instead, but I really like how the honey adds to the texture in this recipe.

Carrots - You'll need about 4 carrots, shredded.

Apples - I use one Ambrosia apple. Feel free to try whatever kind of apples you have on hand.

Flaxmeal - This also adds flavour and adds to the nutritional count.

Coconut Oil - I like how the coconut oil creates a specific texture in most baked goods, but you can definitely sub this for butter or olive oil.

Apple Sauce - Adds a bit of more of sweetness.

  • Grain Mill (optional)
  • Stainless steel muffin tin
  • Large bowl

How to Make Fresh Milled Morning Glory Muffins

Step 1: Preheat oven to 425F. Spray a 12 count muffin pan with avocado oil or use muffin liners.

Step 2: Mill your flour so you have enough for this recipe.

Step 3: Whisk together the flour, baking soda, cinnamon, salt, and flaxmeal.

Step 4: In another bowl, whisk together the eggs, honey, oil, applesauce, and vanilla.

Step 5: Whisk in the carrots and apples.

Step 6: Pour these ingredients into the dry ingredients and slowly mix with a wooden spoon or spatula. Do not overmix. Then add in the raisins and fold everything together until nicely mixed.

Step 7: Spoon the batter into liners, filling them all the way to the top. Bake for 5 minutes at 425F; then, keeping the muffins in the oven, reduce the oven temperature to 350F. Bake for an additional 15 minutes or until a toothpick inserted in the center comes out clean. Allow the muffins to cool for about 10 minutes in the pan, then transfer to a wire rack to cool until ready to eat.

Step 8: Store leftover muffins in a sealed container on the counter for 2 days, then transfer to fridge for up to one week. These muffins also freeze amazing.

Can I make Morning Glory Muffins with whole wheat flour?

Yes, you definitely can. Use the same amount of flour that says on the recipe, but if the batter is too thin when you've mixed all the ingredients, add 2 more tablespoons of flour until the consistency is a bit thicker.

What is fresh milled flour?

Fresh milled flour is flour that is ground from whole grains - wheat, spelt, or rye - just before use, retaining all the natural nutrients, oils, and flavour that are often lost in commercially processed flour. This preserves all three parts of the grain: the bran, the germ, and the endosperm. This is what makes it nutritious and flavourful.

Can I freeze these muffins?

Yes, they freeze beautifully. After they're baked and cooled, you can put them in a container and store them in the freezer.

Morning Glory Muffins with Freshly Milled Flour

Ingredients

  • 2 cups fresh milled soft white wheat
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup flaxmeal
  • 3 large eggs
  • 1/4 cup honey
  • 1/2 cup coconut oil, melted and cooled
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon pure vanilla extract
  • 2 cups shredded carrots, about 4 carrots
  • 1 cup shredded apple
  • 1/2 cup raisins

Instructions

  • Preheat oven to 425F. Line your muffin tray with cupcake liners.
  • Mill your flour so that you have 2 cups worth.
  • Whisk the flour, baking soda, cinnamon, salt, and flaxmeal in a large bowl. In a medium bowl, whisk the eggs, honey, oil, applesauce, and vanilla together until combined.
  • Whisk in the carrots and apples.
  • Pour the wet ingredients into the dry ingredients, and stir slowly with a wooden spoon or spatula. Add the raisins. Fold everything together just until combined.
  • Spoon batter into the liners, filling them all the way to the top.
  • Bake for 5 minutes; then, keeping the muffins in the oven, reduce the oven temperature to 350F. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in pan for 10 minutes, then transfer to a wire rack to cool until ready to eat.
  • Cover leftover muffins and store at room temperature for up to 2 days.
