How to Make the Best Ever Rhubarb Muffins
- Mill the flour so that you have 1 and 3/4 cups of flour.
- Mix all the dry ingredients.
- Melt the butter and add that to the wet ingredients, mixing quickly so that the egg in the mixture doesn't scramble.
- Mix the dry ingredients with the wet. Then add in the rhubarb.
- Pour into muffin cups until 2/3 full.
- If you want the crumble topping, add all the ingredients and mix with mixer. Sprinkle on top of muffins.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
Tips for Rhubarb Muffins
- Using a hand mixer for the crumble topping will make it go much faster and easier!
- Dice the rhubarb into small bite size pieces, this will help with the texture after it's baked.
- Do not overbake these muffins. That will result in them being overly dry.

Ingredients
- 1 3/4 cup fresh milled flour
- 2 tsp baking powder
- 1/2 and 1/4 cup coconut sugar
- 1/4 tsp salt
- 1 egg
- 1/2 cup milk
- 1/2 cup greek yogurt
- 4 tbsp melted butter
- 2 tsps vanilla extract
- 2 cups chopped rhubarb
- 1/4 cup oats
- 2 tbsp soft butter
Instructions
- Preheat the oven to 400 degrees. Line a muffin tin with 12 muffin liners.
- Mill enough flour for 1 and 3/4 cups of flour.
- Combine the flour with the 1/2 cup coconut sugar, baking powder, and salt.
- In another bowl, mix the egg, greek yogurt, milk, butter, and vanilla.
- Mix the dry ingredients into the wet ingredients.
- Add in the rhubarb but be careful not to overmix.
- Divide the muffin batter into the 12 muffin tins.
- To make the crumble topping, mix the oats, 1/4 cup coconut sugar, and butter in a mixer.
- Top the muffins with the crumble.
- Bake for 20-25 minutes.
- Let rest in pan for 5 minutes, then transfer to a cooling rack to let cool.
